Slow Cooker Pork Chops with Stuffing Crust! The Easy 4-Ingredient Dump-and-Go Dinner

Some dinners ask for a lot of your evening. This one asks for about ten minutes in the morning and then leaves you alone. Tender pork chops, a savory stuffing crust on top, and a rich, velvety chicken gravy underneath that turns everything it touches into pure comfort. Only four ingredients, and no browning, no chopping, no fuss.

Ingredients

  • 4 to 6 bone-in pork chops, about 3/4 to 1 inch thick
  • 1 box (6 oz) dry stuffing mix, any flavor you like (chicken or herb works best)
  • 2 cans (10.5 oz each) condensed cream of chicken soup
  • 1/2 cup water or chicken broth

Pinch of black pepper and garlic powder is welcome, but the dish is delicious without them.

Directions

  1. Lightly grease the slow cooker insert, or use a liner for easy cleanup.
  2. Whisk the cream of chicken soup with the water or broth until smooth, then spread about one third of it across the bottom.
  3. Lay the pork chops in a single layer. If you need to overlap them a little, that is fine.
  4. Pour the rest of the gravy mixture evenly over the chops so every piece is coated.
  5. Sprinkle the dry stuffing mix over the top in an even layer. Do not stir it in. The stuffing soaks up the steam and gravy and turns into a soft, savory crust.
  6. Cover and cook on LOW for 4 to 6 hours, or on HIGH for 2 to 3 hours, until the pork is tender and reaches an internal temperature of 145 degrees F.
  7. Let it rest with the lid off for 5 minutes, then spoon the gravy over each chop and serve.

Tips for the best result

  • Thicker chops need the full time, thin boneless chops can be done in 3 to 4 hours on LOW, so check them early.
  • For a slightly crispier top, slide the stuffing layer under the broiler for 2 to 3 minutes after cooking, only if your insert is oven safe.
  • If the gravy seems too thick near the end, stir in a splash of warm broth.
  • Leftovers keep in the fridge for up to 3 days and reheat gently with a spoonful of extra gravy.

What to serve with it

Creamy mashed potatoes are the classic partner, because they love that gravy. Green beans, buttered corn or roasted carrots round out the plate, and a warm dinner roll never hurts.

This is the kind of meal that fills the house with a cozy smell and brings everyone to the table without being called twice. Save it for a busy weeknight, a chilly Sunday or any day when you want dinner to cook itself.
